SunDried Tomato Quinoa


Sundried tomato puree- can be used for many things.

Into your food processor combine:




 

Sundried tomato 

Garlic

Parlsey (Basil would be good but I didn't have any)

Olive oil (a couple Tbls)

It will look like this

Add some chicken stock (You could also add more olive oil to get the right consistency)


Next cook your quinoa according to package directions. General ratio is 2:1. to2 parts liquid to 1 part quinoa. Bring to boil and then reduce to simmer for about 10-11 minutes. This is how you want your cooked quinoa to look.
Add the tomato puree and some fresh chopped parsley or basil and stir to combine. Don't forget to add salt and pepper.
